Nicholas began his remarkable cake decorating career at the age of 10 by baking his parents’ anniversary cake. Eight years later he published his first cake decorating and design book. After high school, Nicholas worked at The National Bakery School of England in London, completing a two-year course in cake decorating and design. At age 21, he was commissioned by England’s Royal Family to decorate one of the wedding cakes for the wedding of Lady Diana and Prince Charles. He then created the Queen Mother’s 80th birthday cake and the Christening cake for Prince Harry. Today, he is on the cutting edge of many cake artistry publications. He is the owner of the International School of Sugar and Confectionary Arts in Atlanta, Georgia, and its sister school in Tokyo, Japan. As a master teacher, Nicholas has taught in 26 countries, including The French Pastry School in Chicago. He is the author and co-author of over a dozen books, and his shelf is covered with numerous awards, including the Top Ten Cake Artists in America by Dessert Professional Magazine and the Cake Hero Award by Cake Masters Magazine.
